    Honey, 1.75 cup
    Instant Coffee, 8 fl oz (or brewed)

    Egg, large, 4
    *Extra Virgin Olive Oil, 2 tbsp
    Granulated Sugar, 1 cup

    *Whole Wheat Flour, 3.5 cup
    Baking Soda, 1 tsp
    Baking Powder, 2 tsp
    Cinnamon, ground, 1 tsp
    Allspice, 1 tsp
    Salt, 1 dash


Can frost with a mixture of confectioner's sugar and orange juice, if desired. (Frosting is not in the calorie count)


Bring honey just to a boil in saucepan. Cool and add coffee. Beat the eggs until light, then add the oil, beating well to blend. Gradually beat in the sugar. In medium bowl, combine dry ingredients. Add them to egg mixture alternately with the honey-coffee mixture. Mix well. Pour batter into 2 greased 9 1/2 x 5 1/2 x 3" loaf pans. Bake at 325 degrees for 1 hour.

Serving Size: Makes approx. 18 1-inch-thick slices
