    1 yellow onion, chopped
    2 tsp. garlic, minced
    1 Tb. olive oil
    1 medium zucchini, chopped
    1 medium yellow squash, chopped
    1 medium potato, chopped
    2 roma tomatoes, chopped
    1/2 c. mushrooms, chopped
    1 tsp. dried thyme
    salt & pepper
    1 c. shredded Italian cheese


I like to use Montreal Stake seasoning.
It is good with oregano in place of thyme.


Preheat oven to 400 degrees. Sauté onion and garlic in olive oil until softened, about 5 min.
Spray 8X8 baking pan with non-stick spray. Spread onion and garlic in bottom of pan.
Chop vegetables into 1/2 in pieces, mix together and add to baking pan, spread evenly.
Sprinkle generously with salt, pepper and thyme.
Cover dish with foil and bake 30 min. Remove foil, top with cheese and bake for another 10 min until cheese is golden brown.
