Traditional version, no nuts, no raisins Traditional version, no nuts, no raisins

    1 3/4 cup flour
    1/4 tsp baking powder
    1/2 tsp baking soda
    1 tsp salt
    1/2 tsp ground cinnamon
    1/4 tsp ground cloves

    1 1/3 cup sugar
    1/3 cup shortening
    2 eggs

    1 15oz. can pumpkin

    1/3 cup milk, fat free is fine
    1/2 tsp vanilla extract


Combine dry ingredients. In a separate bowl, beat together sugar, shortening, and eggs until light and fluffy. Add in pumpkin and continue to beat until well incorporated. scrape sides of bowl.
Alternately add dry and milk/vanilla. Be sure everything is well combined.

Pour into loaf pan(glass or metal is fine) that has been sprayed with baker's spray.

Bake in Preheated 350* oven for about 1 hour. Test for doneness with a toothpick. Should come out dry.

Serving Size: makes one 9X5 loafpan
