Introduction

Ingredients

    5 Red Potatoes, Medium
    3 c Brocolli, Fresh Steamed
    1 1/2 c Shredded Medium Cheddar Cheese
    2 Tbsp Butter, salted
    2 tsp Salt
    1 tsp Pepper, black

Directions

Bake potatoes and steam broccoli, while they are still hot remove skins from potatoes and smash together all ingredients, reserving 1/2 cup of cheese. Place in a medium casserole dish, top with cheese and bake 10-15 min at 325*, until cheese is melted.

Serving Size: makes 8 side dish portions
