Easy slow cooker soup. Satisfying and healthy. Easy slow cooker soup. Satisfying and healthy.
Number of Servings: 8


    4 frozen chicken breast halves
    3 cups chicken broth
    2.5 cups tomato sauce
    2.5 cups medium salsa
    2 cups chopped onions
    2 cups canned drained or prepared from dry black beans
    4 tsp taco seasoning
    16 oz Trio nacho cheese sauce mix, prepared


Use low sodium taco seasoning and/or low sodium chicken broth to lower sodium content.


Place chicken breasts in slow cooker. Cover with tomato sauce, salsa, chicken broth, taco seasoning, black beans and chopped onion and put on high for 6-7 hours. Take chicken out and shred. Put back into pot. In the last hour, prepare cheese sauce mix according to package directions and add to slow cooker. Serve alone or with low fat sour cream, green onion and/or fresh chopped tomato. Can also top with crumbled tortilla chips if desired but be sure to add to nutrition tracker.
