Stuffed Red Peppers w/ Ground turkey and zuchinni & Squah Stuffed Red Peppers w/ Ground turkey and zuchinni & Squah

    Large Red Bell Pepper
    1 zuchinni & 1 yellow squash
    7 oz. ground turkey breast
    Jack's Medium Salsa (2-4 tbsp)
    Weight Watchers Mexican Blend Cheese 1/3 cup


Brown onions & garlic, put to the side. Brown ground turkey - season and when about 80% cooked, add browned onions & garlic. Chop zuchinni & squash into small pieces and saute - add to ground turkey mixture. Stuff red peppers with mixture saving top of pepper. Spray bottom of baking dish - lay peppers on side. Bake for 30 minutes @ 350 - remove from oven and add Jacks Salsa & Cheese - back for additional 15 - 20 minutes.
