    1/2 lb ground turkey white meat
    1/2 lb ground turkey thigh meat
    1/4 c finely chopped sweet peppers, any color
    1/4 c thinly sliced scallions
    2 T ketchup
    1 t. ground mustard
    1/4 c egg whites or egg substitute


Put a cookie sheet or piece of foil on the oven shelf below the muffin pan to catch drips.
Any onion can be used in place of the scallions; if using dried minced onion, only use 2 T.
Salt and/or prepared horseradish can be added to the mixture before baking, if you like.


Preheat oven to 375 F.
Combine all ingredients, tossing lightly to blend.
Spray a 6-cup muffin pan (2 1/2-inch cups) with non-stick cooking spray.
Put about 1/3 c meatloaf mixture into each cup. Pack it down gently with a fork to ensure firm "muffins". The meatloaf mix will round out over the top of the muffin cup. That's okay.
Bake at 375 for about 30-40 minutes, until fully cooked through and lightly browned on top.
Serve with ketchup or horseradish sauce
