Ingredients

    for pancakes:
    1 cup Pamela's Gluten-Free baking mix
    1.5 tbsp coconut oil (semi-solid)
    1.5 tbsp lemon curd
    3 tbsp finely shredded unsweetened coconut flakes
    1 egg
    1 cup vanilla-flavored coconut milk dairy-free beverage

    for topping:
    maple syrup
    mixed berries, frozen (thawed)
    butter

Directions

pancakes: mix batter ingredients until well blended. cook on griddle over medium heat.

sauce: put the berries, syrup and butter in a saucepan over low heat. cook until warm through.
