    Spinach, frozen, 2 package (10 oz) yields

    Tofu, extra firm, 1 block

    Mozzarella Cheese, part skim milk, 8 oz

    *Classico Fire Roasted Tomato and Garlic pasta sauce, 26oz jar.

    Barilla Manicotti, 8oz package.

    Onions, raw, 1 medium (2-1/2" dia)

    Garlic, 3 cloves (minced)

    Oregano, ground, 2 tbsp (to taste)

    Waterchestnuts , 1 cup chopped

    Salt and Pepper to taste.


Boil manicotti al dente (8-9 minutes) and drain; place aside.
Thaw and drain frozen spinach. Drain and crumble tofu and mix with spinach.
Sautee onion, garlic, and waterchestnuts in approx. 1tbsp olive oil for approx 3 minutes; add to spinach mixture.
Stir in 2 cups of pasta sauce.
Add spices (seasoning).

Fill manicotti with mixture and place in lasagna pan. Cover with remaining mixture and half of cheese. Bake at 350 degrees for 20 minutes.

Pour rest of pasta sauce over manicotti and cover with remaining cheese. Bake for another 10 minutes.
