Introduction

This recipe is very low fat due to not using any oil. I make a large pot, and freeze several single servings in sandwhich bags for a quick meal when there's no time. This recipe is very low fat due to not using any oil. I make a large pot, and freeze several single servings in sandwhich bags for a quick meal when there's no time.
Number of Servings: 7

Ingredients

    1 16 ozbag of green or red lentils
    2 15 oz cans of diced tomatoes (i use the ones with basil and oregano)
    2 lemons
    4 stalks of celery, chopped
    1 onion, diced
    1tbsp minced garlic
    48oz msg free chicken or vegetable broth
    fresh oregano to taste
    1 large bag of fresh spinach.

Directions

squeeze the juice of one lemon into a large pot and add the onion and celery. Saute for 7-10 minutes until clear.

Add the bag of lentils, tomatoes broth and oregano to the pot and bring to a boil.

Simmer for 45 minutes, then squeeze juice of remaining lemon and stir in spinach until wilted.


Serving Size: Makes 7 1/2 cup servings
