Ingredients

    2 Chicken breast fillet, skinless and boneless
    1 Red bell pepper sliced in thin strips
    1 cup Onion chopped
    1 tsp Chopped Garlic
    3 Spring Roll Rice wrappers
    Fresh Herbs to taste
    Salt & Pepper to taste

Tips

If you have calories to spare, rolls are good with Asian sweet and sour dipping sauce


Directions

Slice Chicken breast inn very thin strips
Combine in a bowl the chicken, garlic and herbs
Spray cooking pan with cooking spray
Add chopped onion and cook till softened
Add chicken mixture, stir till cooked, adding a little water if it starts to burn
When cooked set aside to cool
In a bowl add warm water and place 1 Rice wrapper so soften
When wrapper turns opaque, remove gently from bowl and lie flat on plate
Fill with pepper strips and chicken mixture
Roll up and enjoy
