Ingredients

    2 egg whites
    1 tsp parsley
    1 tsp thyme
    1/2 cup Panko bread crumbs
    Salt & pepper, to taste
    4 (4 oz) lean boneless pork chops
    1 1/2 Tbsp I can't believe it's not butter light, divided
    2 Tbsp flour
    2 3/4 Tbsp low sodium beef broth
    1 cup unsweetened almond milk

Directions

1. Preheat oven to 425 degrees. Lightly spray a baking pan with cooking spray and set aside.

2. In a small bowl, whisk together egg whites and 1/4 cup milk.

3. In a separate larger bowl, combine Panko, parsley, thyme, salt & pepper.

4. Dip pork chops in egg mixture, then fully coat in bread crumb mixture. Set aside.

5. Heat a large skillet over medium heat and add 1 1/2 tsp butter. Add pork chops and cook for 4 - 5 minutes per side or until browned. Transfer pork to the prepared baking pan.

6. Bake, uncovered, for 15 - 20 minutes or until cooked through.

7. Meanwhile, in a small skillet over medium heat, melt remaining butter. Stir in flour. Slowly add beef broth and remaining milk. Bring to a boil, stirring continually. Cook until thickened, about 3 - 4 minutes. Season to taste with salt & pepper. Serve over pork chops.
