Introduction

Yummy soup/stew that is even better the next day! Yummy soup/stew that is even better the next day!
Number of Servings: 12

Ingredients



    Chicken stock, home-prepared, 2 cups
    *Tomatoes, red, ripe, canned, whole, no salt added(large cans)
    Beans - Bush's Black Beans Reduced Sodium, (1can)
    Beans, red kidney, (1 can)
    Celery, raw, 5 stalk, large
    *Onion - Yellow - 1 med, chopped
    Carrots, raw, 6 carrot chopped (chunks)
    Bertolli EVOO (1 tbsp),
    Water, tap, 1 cup
    *Baby Spinach - Fresh Express - 1 bag
    *Keilbasa - Turkey, 1 package
    *Potato, raw, 1 medium , chunked

Tips

Salt, Pepper, and Garlic to taste


Directions

In large heated stockpot, add EVOO (Med/High heat). Toss in chopped onion, celery, and carrots (and garlic - not included in recipe). When soft, toss in the diced potato and add chicken stock. chop tomatoes and add in (juices also). Add 1cup of water to the stock (approx). Next, drain and rinse beans - add to pot. Rinse and add baby spinach (punch down). Chop keilbasa and add to stock pot. Reduce heat to med/low and simmer for approx 1 hour (or longer). Goes great with a nice crusty bread (and is even BETTER the next day!).

Serving Size: Makes approx 12, 1cup servings
