Ingredients

    Hummus, 1 tbsp
    Feta 1 oz (I use reduced fat)
    Avocado, sliced
    4 Tortillas (not listed in calorie count)

    1/2 Red Onion diced
    1 Zucchini, diced
    5-6 Kalamata Olives, sliced
    1/2 c Mushrooms, sliced
    Spinach, 1 cup (handful of leaves, chopped)
    Red Bell Pepper, 0.5 cup, chopped
    6 cherry tomatoes, sliced
    12 oz (4 servings), Chicken Breast

    Thyme, Salt and Pepper to taste

Directions

In a skillet, add all vegetables. Cook until soft. Add chicken and cook until done. Put mixture aside and clean skillet.

Spray non-stick cooking spray in skillet. Take a tortilla and spread with hummus, sprinkle in some feta, and place about 1/4 of an avocado. Then fill with the cooked veggie-chicken mixture. Fold in half and grill on skillet, browning both sides.

Cut into pieces and serve.
