    1 T. Olive Oil
    1 onion, chopped
    1 stalk celery, chopped
    2 carrots, chopped
    4 cloves garlic, chopped
    2 T. chili powder
    1 T. ground cumin
    pinch black pepper
    4 C. vegetable broth (reduced sodium)
    1 lb dried black beans, rinsed and soaked according to package directions
    1 12 oz bag frozen corn
    3 medium tomatoes, chopped finely or pureed


Heat oil in a large pot over medium high heat. Stir in chopped onion, celery, carrots and garlic for 5 minutes. Add seasonings and cook for another minute. Stir in vegetable broth, half of the beans and the frozen corn. Bring to a boil. Mash or process the remaining beans in a food processor, along with the tomatoes. Stir into boiling soup mixture. Reduce heat to a simmer, cover and cook for as long as necessary until the beans are the consistency you prefer. You can cook for as few as 15 minutes, or as long as two hours, stirring often.
