Ingredients

    3 oz Sugar Snap Peas
    2 handfulls or cups Arugula
    1 tsp Sesame Oil
    1/2 T Extra Virgin Olive Oil
    1 T Peanut Butter
    1/2 T Lite Soy Sauce
    2.5 oz Red Onion
    Hot Pepper Flakes(optional)

Directions

Place peanut butter in a bowl. Stir in oils a little at a time until peanut butter/oil mixture is smooth. Stir in soy sauce and hot pepper flakes. Add sugar snap peas, red onion, and arugula and toss until fully coated.
