    2Tbsp olive oil
    1 onion chopped fine
    6 garlic cloves minced
    3 Tbsp fresh chopped parsley
    2 Cups pomi straines tomatoes
    1/4 tsp dried Thyme
    1/4 tsp red-pepper flakes
    1/4 tsp ground black pepper
    5 Lb mussels In shell, scrubbed and debearded
    salt if needed


Note: 1 cup cooked mussels requires 1.25 Lb of mussels in the shell.
If you serve this with a pasta it will serve 6.
you can also add any seafood you like.


Heat the oil in a large pot, add onion and garlic , cook,
on moderate heat until translucent about 5 min.Stir in parsley , tomato , thyme and red pepper flakes reduce heat to simmer for about 25 minutes.
Meanwhile clean mussels, discard any that does not close when tapped on.Add mussels to pot cook until mussels open ,remove mussels, add pepper to the broth and salt if needed, ladle broth over mussels and serve with garlic bread for dipping.
