    1 cup frozen has browns, thawed
    1 tbsp oil
    4 tbsp bacon bits
    4 large eggs
    3/4 cup milk
    1/4 tsp freshly ground pepper
    1/2 cup shredded cheddar cheese

Preheat oven to 350 degrees. Coat 12 muffin cups with cooking spray.

Heat oil in skillet. Add potato. Cook until lightly browned. Stir in bacon bits.

Combine eggs, milk, and pepper.

Divide potato mixture, then egg mixture among muffin cups.
Sprinkle each muffin with cheese.

Bake 22 to 24 minutes until eggs are set and slightly puffed. Remove from muffin cups and serve.
