Introduction

I use fat free 1/2 and 1/2 in this recipe instead of whipping cream

Number of Servings: 4

Ingredients

    2 Tablespoons butter
    2 tablespoons finely chopped green onions
    1/4 cup chopped sun dried tomatoes in oil, drained (optional)
    1 pound sea scallops
    1 cup whipping cream (I use FF 1/2 & 1/2)
    3 tablespoons white wine
    1/4 teaspoon crushed or 2 strands saffron
    1/2 teaspoon dried basil
    salt to taste
    white pepper to taste

Directions

Melt butter in large skillet, add onions and tomatoes; cook over medium high heat for 3 minutes. Place in a small bowl and set aside. Add scallops and sauté until scallops are opaque-about 2 minutes.

Do not overcook. Remove scallops from pan, reserving the liquid. Add cream, wine, saffron, and basil to skillet. Cook stirring over medium high heat for 5 minutes. Add onion mixture, scallops, salt and pepper. Heat through. Serve scallops and cream sauce over angel hair pasta
