Introduction

Ingredients

    2 c diced zucchini
    2/3 c long cook rice
    1 onion, small, chopped
    1-2 eggs
    1 oz Velveeta
    Salt & Pepper to taste
    Water (for rice, I use instructions on bag)

Tips

I have also used a flavored rice mix and added the zucchini and used the microwave instructions on the package. Gives it a different flavor.


Directions

In a 2 quart saucepan cook zucchini, rice, water and onion until done. Add butter and cheese. Beat egg(s) in a bowl and add a little of the rice mixture to egg to temper. Mix into zucchini mix. Microwave for 5 minutes, stir and microwave for another 3 minutes.
