Introduction

Ingredients

    2 cups cubed Sweet potato
    1 small onion
    1 can diced tomatoes, including juice
    1 pkg frozen chopped spinach, thawed and drained
    1/4 cup Raisins, soaked in hot water to cover
    1.5 tsp Cumin
    1 tbsp Cinnamon
    1 can Chick Peas, rinsed and drained

Tips

can try this with any leafy green instead of spinach, add ground beef or chicken and/or serve over couscous or rice


Directions

Saute Sweet Potato and onion. cover and cook until SP is soft. add spices and stir well to coat. AddTomato, spinach and raisins including soaking water, stir well. Allow to cook until mixture starts to bubble. Add chickpeas and cook 2 minutes until heated through.
