Introduction

Good for potluck or covered dish. Cooks up quickly with little mess or effort. Good for potluck or covered dish. Cooks up quickly with little mess or effort.

Ingredients

    2 c. rice
    1 package frozen peas and carrots
    1 packet dry mushroom gravy mix
    2 lbs ground beef
    1 lg onion, chopped
    1 lb sliced mushrooms
    Generous dash of nutmeg (opt.)
    1 can (family size) condensed cream of mushroom soup
    Shredded cheddar cheese

Directions

Cook rice with mushroom gravy mix and frozen vegetables. Brown ground beef with onions and mushrooms. Drain well, add a dash of nutmeg. Mix with rice.
Add 3/4 of cream of mushroom soup. Place mixture in 9x13 baking dish. Spread remaining soup over top. Top with cheese. Broil on high until toasted.
