    Prepare rice: 2 cups cold water to 1 cup dry rice. Add Tbs. Butter to pan with close fitting lid and bring to boil. Stir once, replace lid & reduce heat to lowest heat possible. Allow to cook undisturbed for 45 minutes.

    Add meat to frying pan. Brown. Add mushrooms, sliced summer squash, and 1/2 tsp each of the following spices: garlic & basil. Add 1/8 tsp of cayenne pepper. Stir the pan. Add grape tomatoes cut into halves.

    By this time the rice should be done. Measure out 3/4 C (a serving) into the pan, mix into the dinner, and turn out into a serving bowl.


One can add cheese for a heartier meal, but remember to add this extra to the nutrition for the day!


Prep time is 5 minutes to cut & clean all veggies.
If using leftovers, cooking time is 15 minutes. If cooking from scratch, begin the rice first. It takes 45 minutes or more. When it is nearly done, begin browning meat and the rest of the meal.
