Introduction

Ingredients

    2 T olive oil
    1 medium sweet potato (size of 2 fists)
    1/3 cup pine nuts
    3 cups whole wheat penne pasta
    four leaves fresh basil
    sea salt
    fresh ground pepper

Directions

Bring a large pot of water to boil, add penne pasta
While it is boiling, peel and chop sweet potato into 1" cubes.
Cut or rip basil into small pieces
Heat olive oil in large skillet and add sweet potatoes, stirring occasionally.
Toast the pine nuts by putting into a small dry pan over low heat, shaking every minute or so until light brown.
When pasta is al dente, strain. Add to the pan with the sweet potatoes along with salt, pepper and basil, and stir for an additional 3-4 minutes or until potatoes are tender.
Makes three 1 1/4 cup servings
