Ingredients

    3 cups 13-bean soup mix
    1 ham hock
    1 cup onion, chopped
    1 med carrot, chopped
    3 cups kale, chopped
    1 qt whole canned tomatoes, crushed
    1 1/2 tsp to 1 Tblsp chili powder
    1 garlic cloves, crushed

Directions

Wash and soak 2 cups 13 bean soup mix overnight. Rinse the beans. In a large pot, bring 2 1/2 quarts water to boil with beans and ham hock. Reduce heat and simmer for 3-31/2 hours. Add chopped onion,carrot, kale, tomatoes, and spices. Simmer 30 min. Makes about 8 servings.
