    1 C. wheat flour
    1c. quick cooking rolled oats
    1 TBSP baking powder
    1/2 tsp. ground cinnamon
    1 slightly beaten egg white
    1 c. milk
    1/4 c. unsweetened applesauce
    1/4 c. honey
    1/2 c. mashed ripe banana
    1/2 c. raisins, chopped appricots, dates or prunes, or dried fruit bits


Makes 12 muffins
In a mixing bowl, stir together flour, oats, baking powder, and cinnamon. Make a well in the center. In another mixing bowl, combine egg white, milk, applesauce, honey, and banana. Add all at once to flour mixture. Stir until just moistened. Fold in dried fruit. Spray nonstick spray or line muffin tin with paper bake cups. Fill 3/4 full; bake in 400 degree oven for 20 min. or until golden.
