Ingredients

    Flour, white, 2 cup
    Coconut Oil, .5 cup
    Granulated Sugar, .33 cup
    Semi-Sweet Chocolate Chips, 0.5 cup
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    Milk, nonfat (skim milk), .66 cup
    Egg, fresh, whole, raw, 1 large
    Vanilla extract, 1.5 tsp

Directions

Mix flour, baking soda, and baking powder together. Set aside.

Mix sugar and egg until smooth. Add in melt coconut oil and vanilla. Stir til smooth. Mix in milk then mix the wet and dry together.

Stir in the chocolate chips.

Scoop into muffin tin that is lined and greased.

Bake for 15-20 minutes or until lightly browned and tooth pick comes out clean.

Makes 12 muffins.
