Great on omelets or Pilafs Great on omelets or Pilafs
Number of Servings: 4


    olive oil spray (I use my Misto)
    4 oz Vidalia onion sliced and rings separated
    6 oz baby bella mushrooms eac cut into 4 slices
    4 oz Sweet Red Pepper cut into strips and halved
    5 oz grape and cherry tomatoes halved


Add ingredients to non stick pan in the order as listed.
Allow about 2-3 minutes between each addition. Season to taste with your favorite seasonings. I use Penzeys Ruth Ann's Muskego Avenue Seasoning, but any blend or combination of seasonings you prefer would be great.

Allow to cook until tender, but not mushy. Maybe 10 minutes after last addition. Stir every few minutes while cooking.

I love this on Omelets and frequently add it to rice or orzo or couscous for great flavor and additional vegetable servings.
