    1 spray olive oil or spray margerine
    1/2 head red cabbage, sliced thin
    3 med. apples, sliced thin
    1 cup red onion, chopped or sliced thin
    1/4 cup Diet Pepsi
    4 Tbsp balsamic vinegar
    1 Tbsp curry powder or Garam Masala


Spray 11 or 12 inch frying pan with cooking spray. Saute onions until clear, add apples and cabbage. Heat through, add pepsi, vinegar, and spice. Cover, let simmer on low to medium heat until done, anywhere from 15 to 45 minutes depending on how soft you want it. Check it every few minutes and add water as needed. If there's too much liquid when you want to stop cooking, turn up the heat to high and let boil until reduced. If you really want the cooking to stop, reduce the liquid in a separate pan.

  • Interesting ingredient - the diet pepsi. Watched a cooking program recently that included coke in a meat dish and it is supposed to be a great tenderizer. Looking forward to trying this. - 2/9/10
