    2 lbs black beans, cooked (or 2 16 oz cans)
    1 cup corn, frozen or fresh
    1/2 cup grated zucchini
    1 shallot or 1/2 red onion
    2 garlic cloves
    1 egg
    1 egg white
    1 cup bread crumbs
    4 tsp ground cumin
    1/4 cup fresh cilantro
    1/4 cup fresh parsley
    1/2 tsp cayenne

    1 Tbsp sunflower oil


these freeze really well
serving ideas: with avocado, guacamole, or sweet potato oven "fries"


Saute corn and zucchini
Mash beans with potato masher
Dice onion, garlic, and herbs
Mix all ingredients except for oil
Form patties using a 1/3 cup and saute in oil for 5-6 minutes each side
Bake at 400F for 20 minutes
