    .5 bulb beetroot
    1 apple
    1 medium carrot
    1 parsnip

    all grated

    1 tbs oil
    2 tbs vinegar
    1 ts honey
    salt, pepper


grate the veg and apple and mix, season with salt, pepper and honey, add herbs if you like. add vinegar and oil and let sit for an hour or two at room temperature.

Serving Size: 2 large bowls for a main dish or 3-4 small side dishes
