12 manicotti noodles
1 Tbsp parmesan cheese, shredded
2 cups light pasta sauce
1 (10oz) pkg frozen spinach, thawed & drained
1 cup fat free ricotta cheese
3/4 cup fat free mozzarella cheese, shredded
1 egg white
1/2 tsp Garlic Powder
Directions
1. Preheat oven to 400 degrees.
2. Cook the manicotti according to the package instructions for al dente. Drain and set aside.
3. In a large bowl, combine the Parmesan, ricotta cheese, 1/2 cup mozzarella, spinach, egg white and garlic powder and mix well. Scoop mixture into a gallon size Ziploc bag and snip one corner to create a piping bag. Fill each manicotti noodle carefully with the mixture.
4. Spread 3/4 cup of sauce in the bottom of a baking dish and lay each filled manicotti on top then top with remaining sauce. Cover pan tightly with foil.
5. Bake 20 minutes. Remove from oven, uncover and top with remaining cheese.
6. Return to oven and bake 5 - 10 more minutes, or until cheese is melted and bubbly.
