Ingredients

    4 tbsp butter
    1 head cauliflower
    1/4 c 2% milk
    2 oz havarti (I've also used sharp white cheddar and dubliner - go as sharp as you'd like)

Tips

If you don't like the taste of cauliflower, use sharper cheese.


Directions

Break cauliflower into florets. Put into a microwave safe dish with a cover with the butter.

Microwave on high for 6 min. Stir, microwave again for another 6 min.

Pour milk into blender. Add cauliflower and cheese. puree until smooth.

Serving Size: Makes 8 1/2 c servings
