Introduction

Ingredients

1 c frozen corn kernels
4 oz sliced black olives
1 1/2 c diced tomato
1/2 c diced red onion
1/2 c diced red bell pepper
1 1/2 tsp minced jalapeno
1 avocado, diced
1 tbsp olive oil
1 tbsp lime juice
1/2 tsp salt
Tips
Nutritional data is per 4 Tbsp (1/4 c) serving. If you serve this on fish tacos, I use 2 Tbsp per taco.
Directions
Add all ingredients to a medium bowl and stir lightly to thoroughly blend. Refrigerate 1 hour. Makes 2 cups.
