My Mama's Recipe for Chicken Chow Mein with a bit of tweeking from me. My Mama's Recipe for Chicken Chow Mein with a bit of tweeking from me.
Number of Servings: 4


    4 oz. of skinless, boneless chicken breast (cut in 1" chunks or smaller)
    1 medium onion (chopped)
    3 stalks of celery ( chopped to desired size) some like larger pieces.
    1 cup of snow pea pods
    1 cup bean sprouts
    1 cup water chestnuts (canned is fine) rinse well & slice
    1 cup of raw carrots (chopped to desired size)
    2 cups of chicken broth or bouillon
    3 Tbls. soy sauce or to taste


I either serve this over 1/2 cup rice or 1/2 cup fried rice noodles or both. I hope you enjoy this recipe.

You can leave out the Chicken and have it Vegetarian.


In a wok add and heat 1 tbls vegetable oil. Add chicken breast and saute until half done. Add the vegetables one at a time. (in order by what takes the longest to get done) I start with carrots and water chestnuts, then add celery and pea pods, onions and bean sprouts last. I like my vegetables a bit crunchy.

Serving Size: Makes approx 4- 1 1/2 cup servings
