Ingredients

    Better Than Boullion Chicken, 4 tsp
    Water, tap, 6 cup
    White Miso paste, 3 tsp
    Tofu, medium-firm, 0.5 block cut into small cubes
    Bok Choy, raw-shreaded, 1.5 cup
    Chow Mein Noodles, 1 cup
    Carrots, raw, 1 cup, chopped
    Mushrooms, fresh, 1 cup, pieces or slices

Directions

prepare broth by adding better than bouillon chicken 4 tsp and 3 tsp miso paste. Saute sliced mushrooms and add them and the tofu to the broth and let simmer for 10 mins. while the soup is simmering shred bok choy and add it to the soup during the last 5 mins of simmering. Shred the carrots and split between 8 bowls (1 cup servings) or 4 bowls (2 cup servings). Pour soup over carrots and enjoy.
