Introduction

This is an easy recipe I use alot for my lunches. It takes little time to prepare, and while it bakes, I can get other things done. Great for single people as it can be made for one or multiply for several. It has the flavor of lasagna without the white carbs of the pasta. This is an easy recipe I use alot for my lunches. It has the flavor of lasagna without the white carbs of the pasta.

Ingredients

    I frozen chicken breast
    1/2 clove garlic, minced
    2 oz Low fat Ricotta or FF Ricotta Cheese
    2 oz FF Cottage Cheese
    1/4 cup Bertolli's Spaghetti Sauce, I use Tomato Basil flavored
    1 tblsp shredded Parmesan cheese

Directions

In a small baking dish, place the frozen chicken breast. Top the chicken w/ the rest of the ingredients in this order: garlic, Ricotta, Cottage Cheese, Parmesan, Spaghetti Sauce, and a little more Parmesan. Bake uncovered for roughly 45 mins.
