    fat free cooking spray
    3 T raw broccoli slaw
    3 servings egg whites
    1 oz. shredded mozzarella cheese (optional)


Spray small nonstick skillet w/ cooking spray. Add raw broccoli slaw. Saute for 2-3 mins. Add egg whites. Add salt, pepper & tobasco. Run spatula around edge of pan to loosen, swirl egg whites to continue to cook. Repeat. Once egg white are nearly all cooked, add mozzarella cheese to one half, fold omelette in half. Cook for 20-30 seconds, flip, cook for 20-30 more seconds. Enjoy. Makes 1 serving.
