Ingredients

    1 qt low sodium, low fat chicken stock
    1# 93% lean ground turkey
    5 cherry tomatoes, cut in half
    1 c quinoa
    1 T minced garlic
    1 t Mrs. Dash
    1 T coconut oil
    4 green onions, sliced
    2 C spinach

Directions

1.Brown turkey in pan with coconut oil and garlic and green onions. Drain off excess fat.
2.Add tomatoes, spinach, and seasoning . Once heated thoroughly and spinach is wilted, add chicken stock and quinoa.
3.Cook 20 minutes or until quinoa is tender.
