Ingredients

1 medium onion, chopped
1 tsp olive oil
2 cloves garlic, minced
1 lb lean ground beef
2 Tbsp Mrs. Dash taco seasoning
1/2 can (11oz) Mexican corn, drained
1 cup salsa
6 corn tortillas
1 can fat free refried beans
3 Tbsp water
3/4 cup fat free mozzarella cheese, shredded
1 Roma tomato, chopped
2 green onions, chopped
Directions
1. Preheat the oven to 400. Spray a 9x13" baking dish lightly with cooking spray and set aside.
2. Add oil to a large skillet over medium heat. Once hot, add the onion, garlic and beef to the skillet and cook 7 - 8 minutes, until beef is browned and onion is softened; Drain. Stir in the taco seasoning, corn and half the salsa and mix well.
3. In a small bowl, combine the refried beans and water until smooth and spreadable.
4. Place 2 tortillas over bottom of the dish. Cut one tortilla to fill any gaps as layers are assembled. Spread 1/3 beans evenly over tortillas. Top with 1/3 beef mixture and 1/3 of the cheese. Repeat layers one time. Arrange remaining 2 tortillas over cheese. Top with remaining beans and beef mixture. Cover tightly with aluminum foil.
5. Bake 25 minutes. Uncover and top evenly with remaining salsa and cheese. Bake until cheese is melted, about 5 - 10 minutes.
6. Remove from oven allow to rest 5 - 10 minutes before serving. Garnish with chopped fresh tomato and green onions.
