    1/2 cup chopped green bell pepper
    1/2 cup chopped red bell pepper
    1/2 cup chopped onion
    1 clove garlic, minced
    1 tsp. olive oil
    1/2 cup low-sodium chicken broth
    1/2 cup quinoa


Chop the bell peppers and onion. Heat 1 tsp. olive oil over medium-high heat in a 2-qt. saucepan. Add bell peppers and onion and saute' until tender. Add minced garlic and saute' 1-2 minutes more. Add chicken broth and 1/2 cup water to mixture and bring to a boil. Add the quinoa and bring the mixture back to a boil. Cover and reduce the heat to medium. Let cook for 12 minutes or until all the liquid has been absorbed. Fluff with a fork, recover, and let sit off of heat for 15 minutes.
