Ingredients

    I cup whole wheat flour
    1 cup skim milk
    1 tablespoon lemon juice
    1 egg
    1/4 cup liquid egg
    1 tablespoon brown sugar
    1 tablespoon melted butter
    1 teaspoon baking powder
    1/4 teaspoon salt

Tips

Blueberries or your fruit or nut of choice can be added to the batter before ladling it into the pan.


Directions

1. Add the lemon juice to the skim milk and set aside.
2. Sift the flour, sugar, baking powder, and salt into a large bowl.
3. In a separate bowl, whisk together the skim milk, egg, liquid egg, and melted butter.
4. Add the milk mixture to the flour mixture and stir just until incorporated.
5. Heat a frying pan or griddle over medium heat and lightly grease with butter or nonstick spray.
6. Ladle the batter into the heated pan and cook until the top bubbles and the bottom edge is cooked.
7. Flip and cook until the other side is nicely browned. Serve as you like.
