Baked macaroni and cheese Baked macaroni and cheese

    1/2 box of pasta
    6 tbs butter
    5 tbs flour
    3 cups of milk
    2 cups of shredded cheese (divided)


Your choice of cheese. I used cheddar in this recipe.


Melt butter over medium heat. When the foam subsides add flour and cook for 2 minutes whisking constantly. Begin adding milk 1/4 cup at a time integrating into flour until the mixture is smooth, then add the rest of the milk. Switch to a wooden slotted spoon and cook for about 8 minutes stirring in figure 8 patterns. Test by wiping the back of the spoon with your fingertip. If the sauce fills right back in, it's not done. If it leaves a swipe, it's done. Remove from heat and add 1 cup of cheese a little at a time until blended. Stir cooked pasta into cheese sauce. Preheat oven to 375 degrees. Grease baking dish and add pasta and cheese sauce mixture to the dish. Top with the rest of the cheese and bake for about 15 minutes. Let stand for 5 minutes and serve.
