Ingredients

    1 cup long grain brown rice
    1 can pinto beans
    1 can diced tomatoes
    half a medium zucchini, diced

Tips

Sprinkle with Parmesan cheese, salt, pepper, as desired.


Directions

cook rice as directed, add diced zucchini in last 15 minutes of rice cooking. Add beans and tomatoes to pot of cooked rice.
