    2 medium Idaho Potatoes, baked and chopped
    2 Tbsp olive oil, divided
    8 oz finely diced honeybaked ham
    2/3 cup chopped sweet onion
    1/2 tsp thyme
    1/8 tsp black pepper
    2 cups egg substitute (I use better 'n eggs)
    1/3 cup chopped green bell pepper


Bake potatoes in oven OR Microwave for about 5 minutes per potato. Rinse in cold water to stop further cooking. Dice up potatoes, chop onions and green peppers. Heat 1 Tbsp of oil in a large skillet (iron cast works best for browning potatoes) over medium heat; saute onion until translucent (approx 4 minutes); add green peppers and cook another 2 minutes. Add potatoes and remaining oil and cook until lightly browned; Add ham, thyme and pepper. Add egg substitute and mix so that the whole thing resembles scrambled eggs. (or if you prefer, you can leave it alone so that it sets up like an omelet) Serves 4-6 people.
