Ingredients

Potato, raw, 1 large grated
Hillshire Farm Turkey Smoked Sausage, 8 oz
Olive Oil Cooking Spray, 2 serving about 1 second spray
Onions, raw, 1 medium diced
Garlic, 2 clove or more to taste
Chicken Broth, 4 cup
Kale, 4 cup, stemmed & chopped
Salt, 1/2 tsp
Pepper, black, 1/2 tsp
Tobasco Sauce to taste
Tips
I like this a little spicier so add a little bit of white pepper as well. Grating a potato might sound like a lot of work but it actually grates quickly without all the clean up that a food processor requires :)
Directions
Spray a large saucepan with nonstick cooking spray, set over medium heat. Add diced onion, cook, stirring often until soft. Aout 5 minutes. Add the garlic and cook a few seconds more.
Add the sausage, cook until browned, about 5 more minutes. Pour in the broth, bring to a simmer stirring often.
Using the small holes of a box grater, grate the potato into the soup. Still well while returning to a simmer. Cover, reduce the heat to low and simmer for 5 minutes stirring occasionally.
Stir in the Kale, cover and continue cooking stirring occasionally until the kale is tender, about 12 minutes. Stir in the salt, pepper and hot sauce before serving.
Serving Size: makes 6 approximately 1 cup servings
