    1 3/4 cups flour
    2 teaspoons baking powder
    pinch of salt
    1/2 cup almonds or hazelnut with skins on (they taste best if you toast them first)
    2 eggs
    3/4 cup white sugar
    1/3 cup melted butter
    2 teaspoons vanilla
    ½ teaspoons almond extract
    1 ½ tablespoons grated orange rind


In a large bowl, combine flour and baking powder: stir in almonds. Whisk together eggs, sugar, butter, vanilla, almond extract and orange rind; stir into flour mixture until soft, sticky dough forms (if too gooey, add a little more flour).
Transfer dough to lightly floured work surface; with hands, form into smooth ball. Divide in half; roll each into 12 inch (30 cm) long log. Transfer to ungreased baking sheet.
Brush tops with egg white if desired (I don’t usually do this) ; bake in 350° F oven for 25 min or until the roll no longer feels gooey inside. In other words the texture should be firm when you press on the top. Remove from oven and let cool on sheet on rack for 5 minutes.
Transfer each log to a cutting board. With a sharp knife, cut diagonally into ½ inch thick slices. Stand cookies upright on baking sheet for 20 - 25 more minutes longer at the same temperature. Remove biscotti to rack and let cool. Makes about 30 cookies
