Ingredients

    3 or 4 ripe bananas, mashed
    1/3 cup melted butter
    3/4 cup of sugar
    1 egg, beaten
    1 teaspoon of vanilla
    1 teaspoon of baking soda
    pinch of salt
    1 1/2 cup of all purpose flour

Directions

Preheat the oven to 350F (175c). With a spoon, mix butter into the mashed bananas (a fork works best to mash) in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour in last and mix. Pour mixture into a greased 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack for 30 minutes or till cool, then remove and slice to serve!

Serving Size: Makes 16 half inch slices in a 4x8 inch loaf pan
