    3/4 lb lean ground turkey
    1 (16oz) can fat free refried beans
    1 3/4 cup salsa
    1 (4.5oz) can mild green chilies, drained & diced
    1 tsp chili powder
    3 Tbsp scallions, sliced
    1 cup fat free cheddar cheese, shredded
    8 Tumaros multi-grain tortillas

    1/4 cup salsa
    1/4 cup fat free sour cream


1. Preheat oven to 350 degrees. Lightly spray a 13x9" baking dish with cooking spray and set aside.

2. In a large skillet over medium heat, brown turkey. Drain any excess liquid from pan and then add beans, 1 3/4 cups salsa, chilies, chili powder and scallions. Cook just until heated through, about 3 - 4 minutes, then stir in cheese.

3. Meanwhile, wrap tortillas in foil and warm in oven for 8 - 10 minutes.

4. Assemble chimis by spooning 1/2 cup of turkey mix onto each tortilla, then fold in sides and roll up. Place on the baking dish, seam-side down.

5. Bake 20 minutes, or until tortillas are crisp and browned. Serve topped with additional salsa and sour cream.
