Ingredients

    2 cups left over mashed potatoes
    1/4 cup minced onions
    1 large egg, slightly beaten
    1/4 cup flour
    1/4 cup seasoned bread crumbs
    2 Tbsp. olive oil

Directions

mix the first 4 ingredients well. measurer out .25 cup patties and coat them with bread crumbs. heat heavy skillet over med heat and add olive oil, heat until oil is shimmery. Brown potato patties over low to medium heat 5 minutes a side, drain over paper towels. Serve warm as a side with any meats.
